Title: Miniature Cheese Quiches

Yield: 2 Servings

PASTRY SHELLS
2 Eggs; beaten
1/2cMilk
1 1/2tbButter; melted
1cCheese, Cheddar; shredded
  Red pepper or paprika; opt.
1 1/4cFlour, all-purpose
1tsSalt
3tbButter; melted
1 Egg yolk
3tbWater; cold, to 4 tb.

Combine first 4 ingredients; stir well, and pour into pastry shells. Sprinkle with red pepper, if desired. Bake at 350 degrees for 25 minutes or until set.

Pastry Shells: Combine flour and salt; add butter, mixing well. Add egg yolk and water; stir iwth a fork until all dry ingredients are moistened. Shape dough into 24 (1-inch) balls. Place in lightly greased 1-3/4" muffin pans, shaping each into a shell.
